Ok, so this IS the last cake I’m making to order. Hrm. I think I’ve said that before.
Anyway. This was for a great friend’s 40th and after a long baking break, I was quite nervous about how this was going to turn out. In the January cold I wanted to make something reminding us of summer so I went for summer flavours – coconut, raspberry and passionfruit, each as a mousse in this three layer cake. The cake was covered in gently striped buttercream, reflecting the inside layers, with white chocolate ganache drips, desiccated coconut, fresh raspberries and physalis.
This Vanilla and Raspberry cake with meringues is a bit of a Bakernaut classic and probably my favourite kind of cake.
This Winter Carrot Cake comes from Lily Vanilli‘s book Sweet Tooth and is incredible! It’s full of deliciously warming spices, orange zest, honey, dates, walnuts, carrots and a healthy amount of brandy. It’s seriously good.
This Neapolitan cake with piped chocolate names was made for my oldest daughter and 5 of her friends who all celebrate their birthday within a month of each other. A little gathering was had and this four layer cake with the classic Neapolitan flavours of chocolate, strawberry and vanilla was devoured.

This cake was one of two I made for a 40th birthday last weekend. The birthday girl wanted a child friendly cake for her afternoon party but something that wasn’t too sweet or had too much cream. We agreed on my go-to cake: a light fat-free sponge filled with creme patisserie, fresh raspberries and raspberry mousse, topped with a vanilla Swiss meringue buttercream and fresh fruit.
