This Vanilla and Raspberry cake with meringues is a bit of a Bakernaut classic and probably my favourite kind of cake. It’s been such a long time since I last made a layer cake and I’ve really missed it!!
As I was short on time I made my quick go-to vanilla fat-free sponge and then split it in to three layers. The cake was then filled with a vanilla crème patisserie fluffed up with whipped cream and lots of raspberries. I covered the cake in more freshly whipped cream and decorated it with mini pink meringue stars, white meringue clouds and crushed meringue. And some fresh raspberries too.
